We'll make pasta with our hands and a rolling pin, and we'll make orecchiette and maccheroncino just like my grandmother used to make.

The activity consists of an interactive cooking class where we will prepare a typical Apulian lunch together. We will provide you with an apron each and all the utensils to get your hands in the dough and learn every step and secret of our traditional recipes. Together with my husband Stefano we open the doors of our country house to teach you the Apulian cooking techniques that you can easily replicate at home. We will learn together to select the ingredients of our land according to the season, and while preparing the dishes we will tell you their history and that of typical products and local traditions. Afterwards we will enjoy lunch or dinner with a starter and concluding with a dessert, the classic tiramisu that we will prepare together. The cooking class will take place in an ancient 19th century farmhouse, completely immersed in nature! We will only use water and durum wheat flour to prepare the dough. At the end of the preparation, you will enjoy the dish of orecchiette that you have made with your own hands!

Along country roads, among trulli, farmhouses and dry stone walls, I will show you the places I love and experience every day by pedaling together for 20 km (about 12 miles). We start from Alberobello, the capital of the trulli, towards Locorotondo, the most evocative village in the Valle d'Itria: where a tasty stop at a traditional local bakery awaits us. We will taste the typical Apulian focaccia freshly baked by Giovanni, accompanied by a glass of wine. Afterwards, before returning to Alberobello, we will stop at the pastry shop of Signora Maria to taste the almond sweets of our tradition. On the way back we will consume seasonal fruits, picking them directly from the trees (cherries, figs, fioroni, pears, blackberries, mulberries). What is the Mokambo Experience all about? We will make gelato together starting from scratch. In particular.. We will open the doors of our laboratory and we will show you what it means to prepare genuine artisan ice cream faithfully following a recipe from 1840. We'll provide you with aprons, spatulas and spoons and then we'll get to work! The ingredients you will use will be: Local pasture milk from the Alta Murgia Park, eggs from free-range hens, simple cooking sugar, plus the "secret" ingredient that we will select for you! During this experience you will discover how it is possible to create something good and genuine, using a few simple local ingredients and you will understand why (unlike what is believed) it is really difficult to find artisanal ice cream in Italy with a very short list of ingredients.
