What an amazing cooking class! Carlo is not only an incredibly skilled chef, but also a fantastic host who made the entire experience fun, engaging, and full of laughter. From the moment we arrived, we were welcomed like family into his beustiful family home.
The food we prepared was absolutely delicious, fresh, authentic, and bursting with flavor. Carlo shared so much insight into the local cuisine and culture, which made the whole experience even richer. Beyond just cooking, it felt like a true cultural exchange, filled with stories, passion, and joy. We left with full stomachs, new skills, and great memories. If you’re considering a cooking class, do not miss this one! Highly, highly recommended!

This the best coming class ever! Carlos arranged for a taxi for me which was very thoughtful. Nick my driver did the best job! Thank you Nick. The setting for the class could not have been more perfect. A beautiful view from the terrace of the ocean and Carlos lovely farm where we picked some items for our lunch. I learned so much from the class making pasta and cannoli . I am excited to go home and get busy in my kitchen. There were appetizers prosecco and a white wine that paired with the food offerings. The food was fun to make, Carlos a great teacher professional/funny/kind/thoughtful. You leave with recipes and a shopping list. Thank you beyond words Carlos!! Carlo was an amazing host. We had a great time making pasta and cannoli. The location of his home is amazing. The outside terrace is beautiful and overlooks the water. We couldn’t have possibly eaten all the food Carlo prepared for us as well as the food we made. It was a fun night and I would do it again.
This pasta and cannoli masterclass with Chef Carlo was absolutely phenomenal! From the very beginning, including the thoughtful offer of a transfer to his stunning villa, everything was organized at the highest possible level.
Carlo, his wife, his assistants, and his whole family are incredibly generous, welcoming, and hospitable. The class itself was so well-thought-out. Carlo didn't just show us what to do; he actually taught us all the little secrets and details so we can easily recreate these dishes at home. The food was exceptionally delicious! He even surprised us with lovely gifts and sent all the recipes afterward.
One of my brightest memories is going into his beautiful garden to harvest fresh vegetables—we picked a zucchini that was almost a meter long! It was hilarious and so much fun, something I will remember for a very long time.
We ended the evening with a spectacular dinner, enjoying a breathtaking sunset with views of the sea, the beach, and Palermo in the distance. I was also very lucky to share this with a wonderful group of people. I am so happy I found this specific masterclass. I already want to return and bring my friends to experience this magic. Highly, highly recommend!
This was our first cooking class and it was everything we hoped for and more. Carlo is a first rate chef and the pasta, pesto and canoli were exceptional. The canoli was the best we've ever had. Carlo and his assistants, Maria and Francesca were very helpful in taking us through each step of the process. The view was spectacular, and we thoroughly enjoyed the tour of the farm to see the variety of fruits and vegetables grown there and used in his dishes. An amazing, intimate experience unlike any other. Carlo welcomed us into his home as if it were ours and exceeded all expectations. Beyond the food being amazing, his hospitality was very much appreciated considering the heat we were in. Would 110% recommend this experience to anyone visiting Sicily!
This was a wonderfully intimate experience. Chef Carlo is not only an extremely experienced chef, he is very personable and an excellent teacher. The setting is beautiful, picking produce directly from the large garden that has been in his family for decades, with the sea and mountains as the backdrop. And the food was amazing, all prepared from scratch by you under the tutelage of a wonderful chef. Che bei momenti!
Carlo is absolutely amazing!! My wife and I had the best class with him to celebrate our honeymoon. We started by picking a bunch of fresh tomatoes, basil, and more delicious treats from his garden, where he explained his culinary and family history and detailed the process of growing and selling vegetables. He proceeded to teach us how to make a classic Sicilian pasta dish, helping us through each step, as well as the best cannolis we’ve ever eaten. His home as marvelous, he served us prosecco, wine, and his own homemade citrus drink with dessert. Carlo is a well-experienced and incredible chef who has a true passion for food and hospitality. We would recommend this class to anyone traveling to the Palermo area!!!

We had a cooking class with Carlos in April. Learned to make homemade pasta and Cannoli. Was a wonderful experience! We were the only couple at his casa so basically had a private cooking class. Would highly recommend! Jeff and Tiffanie
Carlo was so welcoming and friendly! He made us feel like family immediately upon arrival. His class was easy for beginners, and we loved the recipes! He accommodated one member in our group who was a vegetarian and ensured the recipe was ok for her to eat. His family garden is stunning and learning about his culture and food was the highlight of our trip to Palermo. He is a MUST for your vacation and we just wish we lived closer so we could come back sooner.
I would give Carlo ten stars if I could. What a wonderful experience. He is nor only a great chef but an excellent teacher and host. We enjoyed sharing the experience with a lovely couple from Melbourne, too. A must do experience if you are in Palermo.

One of the best experiences of our entire trip. We booked this as a family of four, two adults and two girls (ages 7 and 11), and it exceeded every expectation.
It was completely private, which made it feel incredibly personal and special. We started in the garden harvesting fresh fruits and vegetables with our daughters, then moved inside to make fresh pasta from scratch. Carlo was patient, engaging, and made everyone feel involved, even our youngest was completely absorbed the whole time.
The setting, the views of Palermo, the food we made together, all of it was world class.
This wasn’t just a cooking class, it was a genuine experience we’ll talk about for years.
If you’re visiting Sicily with family, do not skip this. Highest possible recommendation.

My husband & and I, along with our 2 friends were coming to an end of our 2 week vacation through Italy and Sicily, diid we really need another cooking class???? But I couldn't resist some of the other reviews written by Carlo's guests...and had to experience for myself.
Read other reviews for details about what and how we cooked, but I'd like to tell you it was more like spending time with friends sharing stories while making your own pasta, and the best Cannoli's this Italian has ever had. So to answer my own question... Yes, we did need one more cooking class - Carlo's !
Cooking with Carlo was an AWESOME experience - so warm and friendly, like being invited to a dear friend's home in Sicily. The views from the terrace are spectacular. Learning to make the dough for cannolis and learning to make the pasta was a breeze with such a devoted and engaging teacher. And dining on the end result, with fresh tomatoes from the garden and home-produced olive oil, was a delight. It's been the highlight of our vacation so far. We will have great memories of the experience for years to come!
