We also did the cooking fermentation class and it was great to learn about how to use the fermentation in desserts too! A very fun experience and the best and kind teacher!

Thank you very much again for your comments and coming to my class! I hope you would be able to find amazake or rice koji in your country and keep motivated about amazake! ;)

    Delicious learning experience!

We had a wonderful time learning about how amazake and sake lees can be incorporated into various snacks and desserts! Now I’m really looking forward to making some amazake when we return from our trip! Even if you don’t plan to make or buy amazake in the future, you’ll still learn a lot about fermented foods and have a good experience preparing and eating new dishes. I highly recommend taking a cooking class with Naomi-san when you are in Tokyo.

    Response from Host, Apr 2025

Thank you very much for your comments, which are so encouraging! I had a very good time with you and am glad that you seemed to have gained knowledges about fermented foods! I hope you enjoy the world of amazake further even after returning from Japan! ;)
