What a fabulous experience! Chef Paul is kind, knowledgeable and patient. His place is beautiful and my husband and I learned so much. The other people in our group were so much fun to be in class with. The food was delicious and I can’t wait to try these recipes at home. We highly highly recommend!

I recently celebrated my 50th birthday week with my daughter at Le Foodiste, and it was nothing short of extraordinary. We joined a small group for a three-course cooking class, and the entire experience from the food to the instruction to the facility was exceptional.
The chef’s guidance was clear, patient, and inspiring. I learned so many new techniques and even conquered something I had been hesitant to try before: using a mandoline. The joy of mastering that, alongside my daughter, made the evening unforgettable.

Shopping in the Parisian grocery was so fun! It was a bit hard to hear as it was a busy Saturday evening, but we loved the added experience. Luc is an incredible chef and did a phenomenal job. Our class was super fun. We loved interacting with the other participants, and created a fantastic dinner that we can't wait to recreate at home.

Paolo was very knowledgeable and made the experience so fun! I feel like we learned about the importance of food in French culture, some history as well as how to prepare it. I'd say our group had a lot of fun working together with each other and making the whole experience better. I loved the being able to eat in between the cooking. The food was simplistic but good and something I can easily recreate at home. This is definitely an experience I'd want to do again and hope that Paolo is my guide! He mentioned that he likes to change the menu often just to make sure he's cooking with the most seasonal ingredients!

As a family who loves food and cooking we were pumped for this cooking class. Our spirits were lifted even higher when we met our chef Paulo who immediately greeted us with a warm welcome and showed real enthusiasm about cooking. While we weren't able to go to the market with Paulo, but heard that it was an excellent opportunity to learn what chefs look for in ingredients when curating their menus. Moreover, we really loved the environment Paulo created in the kitchen, he was excellent at combining professionalism with a home style vibe and making us all feel included and helpful in the kitchen. 10/10 experience and would definitely recommend to anyone regardless of culinary interest or experience!

We could understand only about 60% of Luke’s speech. The session went from 4:30 pm to about 11 pm; it was way too much time. The menu was meh at best. The soup was extremely salty. The “sou vide” was basically boiled chicken breast. At $250 per person, it was overpriced. Received 2 glasses of wine. Extremely disappointed.

I am sorry your experience was "an enduro" but unfortunately I have no idea what “an enduro” means.
But it is clear that as you suggest there are many things you did not understand and I am sorry for that.
So let me explain, at least to the readers:
- the market visit cooking class experience is indicated to last 6 hours on our website and on Tripadvisor. Yours started at 4:30 pm and actually finished … at 10:30 pm. But I understand that to justify your terrible review you need to "create" some data.
- it is very hard to believe we served you only 2 glasses of wine. Here is why. By default we serve one glass (or more) during class; then one glass of white and one glass of red during dinner (so yes, that means … 3 glasses minimum). And then we simply keep offering more when the glasses become empty. So 2 glasses: simply not true.
- menu was "meh" at best. Well I guess this is personal. But you should also explain that you actually did not taste the soup (as your Chef explained to me): you were very surprised (shocked?) by the amount of salt your Chef (who is also Michelin star trained) put in the pot of soup. But he has experience salting a cauliflower based soup for 12 people, while it is likely you do not. And he did say that you were concerned about it and as a result … did not even taste it. So I think it is a bit shameful for say it was extremely salty.
- We actually do not do "Sous Vide" because it requires special equipment; but your Chef showed you an introduction to that technique called "ballotine" which does not require any equipment. Sous-vide is simply the best way too cook any animal based protein (he explained why, but I realize that was lost in translation) and Ballotine is a simpler technique which works particularly well with Chicken. But you also made a classic red wine sauce from scratch, a gratin dauphinois, learned how to size and glaze vegetables, and made ice cream from scratch while learning how to poach a fruit …
So again, sorry you did not enjoy your experience, but I can not validate several of the facts you indicate to justify your rating.

You learn a lot about the ingredients. The best part of the experience was the full participation of the class in preparation. Then,sitting together and enjoying the fruits of our labor was the great ending to the evening. Wonderful time.
