What Sets Our Class Apart At Baekusaeng Makgeolli, we are more than a brewery offering a one-day experience. We are leaders in creating makgeolli resources for brewers worldwide—through our offline classes, published book, and online courses. It has been our pleasure to teach students from all over the world, and in every class we: • Share practical brewing knowledge rooted in traditional methods, using fresh, real ingredients—not simplified shortcuts. • Train students to continue brewing at home, giving them the confidence and understanding to ferment independently after returning to their countries. • Encourage experimentation and creativity, helping each student develop their own style and expression of makgeolli. Our goal is simple but ambitious: to grow a global community of makgeolli brewers who understand the craft, respect its traditions, and continue brewing long after the class ends. Korean alcohol is a lot more than just a green bottle of soju, which is diluted ethanol with artificial sweetener. Broadly, Korean alcohols are divided into Tak-ju (unfiltered rice wine), Cheong-ju (filtered clear rice wine) and So-ju (distilled spirit). Here, we will focus on our specialty, soju, but we can also taste other types too. Samhae soju was a beloved choice of spirit among the noble class of Joseon dynasty(1392~1894). This luxurious alcohol had caused cult following, but the making was so resource(rice)-heavy that production had to stop during famines. The current master, Hyeonjong Kim had learned and practiced for more than 10 years under master Taeksang Kim who had inherited and kept the recipe in the family. Sadly, master Taeksang Kim passed away in 2021. We will have a privilege to taste the history. *For private groups, please make a private group reservation or message me. Enjoy a guided visit to the local market to purchase fresh ingredients, sample tasty street food snacks, and learn about typical herbs and spices. Then, get hands-on as you create a selection of popular Korean dishes and master traditional cooking techniques. Finally sit down to enjoy a ‘Hanjeongsik’ dinner including your homemade dishes, along with additional side dishes and dessert.

Learn how to prepare authentic Korean food in a laidback environment during a small-group cooking class in Seoul. Join your instructor at Mangon Market to pick up the freshest ingredients, then return to their home. Get set up at your personal cooking station, then enjoy easy-to-follow instructions and personal assistance from your host. The 3-course menu may include soft tofu stew, bibimbap, bulgogi, kimchi stew, japchae, or stir-fried pork.

Korean cuisine offers a diverse array of flavors and textures, making it surprisingly versatile when paired with wine. While traditionally associated with rice-based spirits like soju and makgeolli, the complexity of Korean dishes can complement various wine styles. Light-bodied whites like Riesling or Pinot Grigio pair well with spicy and tangy dishes like kimchi or Korean BBQ, while medium-bodied reds such as Pinot Noir or Gamay can complement heartier dishes like bulgogi or galbi. Ultimately, experimentation is key, but the contrast and balance between Korean flavors and wine profiles can create delightful culinary experiences.

Learn how to make makgeolli, a milky Korean rice wine, in this workshop at a brewery in the Hyehwa neighborhood of Seoul. The hands-on class will take you through the fundamentals of brewing makgeolli, from washing rice to the filtering process. Learn the fermentation techniques that make Korean alcohol special and taste homebrewed makgeolli before making your own.

After sunset, neon lights and street vendors bring Seoul to life. See the best of South Korea’s capital without having to worry about navigating after dark on a private evening tour that includes a Korean barbecue meal. You’ll visit N Seoul Tower, Naksan Park, and vibrant local markets when they’re least crowded, overcoming the language barrier with your private guide.

We designed this program with a goal of maximizing direct participant experience in makgeolli making from the beginning to the end. The introduction to the traditional Korean alcohol with a storytelling (folktale) will help participants get acclimated to the experience, even if they are new to Korean culture. Lastly, we support our audience engaging in a sustainable practice through utilizing reusable items. This activity also serves as a solid team-building activity as team effort is essential in making traditional alcohol. If needed, we can also help you customize the program (location, program length, available snacks, etc.) for your group upon request.
