What To Expect

This experience near the Boboli Gardens is tailored for small groups of ten or fewer people, providing an intimate cooking class under the supervision of a professional chef.

You have the convenient option of choosing between lunch or dinner time classes, making it easy to fit into your schedule. With flour substitutes, prepare gluten-free versions of classic Tuscan dishes such as pizza, tagliatelle, ravioli, gnocchi, and tiramisu.

After the cooking is done, sit down to enjoy your meal with wine, olive oil and balsamic vinegar. Later, you can access your favorite recipes using an online cookbook and recreate your gluten-free meal.

Our Gluten Free pasta class with Chef Vary was phenomenal!!! Our son is GF so we wanted him to be able to experience all of the delicious pasta here! The entire group loved every bite! If you have a GF person in your group I definitely recommend reaching out to Chef Vary!!! It was delicious, fun and we even left with the recipes!!!

Had an amazing experience with our chef Irene. One member of the family has celiac disease and every effort was made to accommodate. Kitchen was very clean. Irene, our chef, sought our input to personalize the menu ingredients and explain how the dough and sauces were prepared. She was excellent. Afterwards, we all sat down and enjoyed our creations with wine.

Cooking with Chef Vary was one of the highlights of our trip. My daughter is gluten and dairy free(not by choice)! Chef Vary created three delicious dishes for us and my girl was HAPPY !!! We had so much fun and were very sad when the class ended. Don't miss out on his experience!

This was easily the best expereince we did on our trip. Irene made it a wonderful expereince by explaining to us what we were doing, helping us with each step, made an effort to get to know us, and even sat with us while we waited. Chef Vary sent us the recipes afterwards and we are looking forward to making the gf pasta back at home!

Amazing class!!! Chef Vary is so knowledgeable and gave us so many tips to prepare a delicious 3 course meal. Class size is small we had 3 couples in our class. Was great so everyone could learn and ask questions. Food was outstanding!!! Can’t wait to make our own pasta at home!

Learning how to make exceptionally delicious gluten-free food in Italy was an incredible experience! Chef was funny, interesting, and so knowledgeable about food, flavors, and gluten-free cooking! We came in and were asked to look at the food on the marble table. If we didn’t like something, we said so and it wouldn’t be used in our cooking. We made pasta of different colors and sizes, as well as the sauces for them all! We made linguine, ravioli, and pumpkin gnocchi! We also made 3 sauces: one with fresh cherry tomatoes , one with caramelized figs, and one that was pesto! It was all hands on cooking and learning! After everything was made, we had about 45 minutes to eat everything that we had made and drink all the water and wine that we wanted! Words cannot describe how amazingly delicious everything was! We went in July 2024 during a heat wave! The entire kitchen was air-conditioned! We were so happy, comfortable and thrilled to be learning how to make such food! For the cost that we paid, we learned how to make 6 different things, and also learned the basics of gluten-free cooking. We laughed, we leaned and we ate the best meal that we had in all of Italy! Worth every cent!

Chef Vary is the ultimate professional who clearly understands the importance of preventing cross-contamination and treating gluten intolerance and celiac disease with the utmost care. On top of that, the flavor was not lacking—no one would ever know this food was gluten-free. We enjoyed our class and her hospitality. I would definitely take another class with Chef Vary. I'm already planning to return to Florence just to attend more classes with her.

We were really looking forward to this experience and were shocked when we realised we’d paid in USD not AUD. It’s an expensive 2 hour cooking class and unfortunately we found chef vary quite condescending and offensive. It might be her manner and some people might like that but we certainly didn’t. She even said don’t use Italian words as we laugh at you.

It’s nice too that you’re in such a small group to be able to try all the different techniques. The food was amazing and we’re so excited to make it at home!

We had the best time with Vari! She was amazing and kind as she taught us many great lessons and tips for cooking at home. Plus it was GLUTEN FREE! My wife is a celiac and this cooking class was one of her favorite memories from our trip. Vari adapted recipes to whatever preferences the group had and we made delicious tagliatelle, mashed potato raviolis, and gnocchis with pesto! They also have a great wine shop and give you a wine to sip as they clean to room to prep for dinner. Would recommend to any celiac, or person looking to learn great Italian cooking in Florence!
