In this class, our focus is on cooking, plating, and enjoying a full Korean meal — the way it's truly meant to be shared. You'll cook in a calm, well-equipped kitchen inspired by traditional Hanok architecture. Every guest prepares their own dishes using seasonal vegetables and fermented pastes like doenjang and gochujang, some of which are brought directly from the chef’s hometown. The menu is thoughtfully designed to cover a balanced, beautiful table setting — from banchan to soup and main dish — all made by you. Rather than spending time outside, we give that time to real cooking and the joy of creating something by hand. We don’t run commercial market tours, but if you're curious, we're happy to share a few trusted, local markets that offer a more authentic experience. This is not a food tour. The instructor is a professional chef with an educational background and 7 years of experience in Korean cuisine. You'll get hands-on training from a professional chef and learn a good recipe that can easily be repeated at home. The studio is a traditional Korean house, Honok, so you'll see and feel the traditional Korean atmosphere while cooking. The place is easily accessible to Gyeongbokgung Palace.

What Sets Our Class Apart At Baekusaeng Makgeolli, we are more than a brewery offering a one-day experience. We are leaders in creating makgeolli resources for brewers worldwide—through our offline classes, published book, and online courses. It has been our pleasure to teach students from all over the world, and in every class we: • Share practical brewing knowledge rooted in traditional methods, using fresh, real ingredients—not simplified shortcuts. • Train students to continue brewing at home, giving them the confidence and understanding to ferment independently after returning to their countries. • Encourage experimentation and creativity, helping each student develop their own style and expression of makgeolli. Our goal is simple but ambitious: to grow a global community of makgeolli brewers who understand the craft, respect its traditions, and continue brewing long after the class ends. Korean alcohol is a lot more than just a green bottle of soju, which is diluted ethanol with artificial sweetener. Broadly, Korean alcohols are divided into Tak-ju (unfiltered rice wine), Cheong-ju (filtered clear rice wine) and So-ju (distilled spirit). Here, we will focus on our specialty, soju, but we can also taste other types too. Samhae soju was a beloved choice of spirit among the noble class of Joseon dynasty(1392~1894). This luxurious alcohol had caused cult following, but the making was so resource(rice)-heavy that production had to stop during famines. The current master, Hyeonjong Kim had learned and practiced for more than 10 years under master Taeksang Kim who had inherited and kept the recipe in the family. Sadly, master Taeksang Kim passed away in 2021. We will have a privilege to taste the history. *For private groups, please make a private group reservation or message me.
