Korean alcohol is a lot more than just a green bottle of soju, which is diluted ethanol with artificial sweetener. Broadly, Korean alcohols are divided into Tak-ju (unfiltered rice wine), Cheong-ju (filtered clear rice wine) and So-ju (distilled spirit). Here, we will focus on our specialty, soju, but we can also taste other types too. Samhae soju was a beloved choice of spirit among the noble class of Joseon dynasty(1392~1894). This luxurious alcohol had caused cult following, but the making was so resource(rice)-heavy that production had to stop during famines. The current master, Hyeonjong Kim had learned and practiced for more than 10 years under master Taeksang Kim who had inherited and kept the recipe in the family. Makgeolli, a fermented and unfiltered (thus hazy) rice wine, is widely consumed, yet poorly understood, despite its popularity. We've explored hundreds of Makgeollis across Korea, finding fantastic, flavorful bottles—many from small, local producers rarely able to reach a wider audience. Our aim is to introduce you to the best Makgeolli in each category. Learn how to make makgeolli, a milky Korean rice wine, in this workshop at a brewery in the Hyehwa neighborhood of Seoul. The hands-on class will take you through the fundamentals of brewing makgeolli, from washing rice to the filtering process. Learn the fermentation techniques that make Korean alcohol special and taste homebrewed makgeolli before making your own.

By learning this, you will be able to brew your own Makgeolli anytime and anywhere. you can earn 1L of fresh brewed Makgeolli, and 3 different types of Makgeolli tasting.

Immerse yourself in Korean culture and enjoy an authentic home-cooking experience with a local chef at her home. Enjoy a guided visit to the local market to purchase fresh ingredients, sample tasty street food snacks, and learn about typical herbs and spices. Then, get hands-on as you create a selection of popular Korean dishes and master traditional cooking techniques. Finally sit down to enjoy a ‘Hanjeongsik’ dinner including your homemade dishes, along with additional side dishes and dessert.

We designed this program with a goal of maximizing direct participant experience in makgeolli making from the beginning to the end. The introduction to the traditional Korean alcohol with a storytelling (folktale) will help participants get acclimated to the experience, even if they are new to Korean culture. Lastly, we support our audience engaging in a sustainable practice through utilizing reusable items. This activity also serves as a solid team-building activity as team effort is essential in making traditional alcohol. If needed, we can also help you customize the program (location, program length, available snacks, etc.) for your group upon request.
