Cozumel may be famous for its beaches, but some of its best finds are tucked away downtown. Walk beyond the waterfront with your guide, hear stories about island life, and arrive at an unexpected find: Cozumel’s first distillery. Rum belongs to the stories of the Caribbean—Spanish ships on the horizon, sailors following the trade winds, and pirates who turned the sea into legend. Inside, house-made rum and gin are crafted steps from the bar where you’ll taste them. Sample each one neat or in cocktail form and discover how ingredients and distillation shape the aromas and flavors in your glass. Then, watch a bartender turn those spirits into signature cocktails before taking the shaker into your own hands. Balance the flavors, add a final garnish, and enjoy the cocktail you created. The Caribbean’s old rum stories find a modern chapter here—in a stylish downtown bar, with tacos on the table, rum-infused fried plantain for dessert, and a cocktail in your hand that you mixed yourself.

Begin with an introduction to agave spirits, their history, their role in biodiversity, and their cultural significance in Mexico. Then, delve into the first spirit, exploring its origin, history, and tasting notes. For example, learn about Comiteco, a pulque spirit from Chiapas, made from the aguamiel extracted from Agave Americana in Comitán. This aguamiel ferments in living fermentation vats that have been continuously nurtured for generations, creating a unique aromatic and structural profile. Identify its aromas, flavors, and possible pairings, connecting each profile to its artisanal production process. Then, play a sensory game by introducing a key ingredient present in the spirit—such as cinnamon—so that you can smell it separately and recognize it within the drink, understanding the inspiration behind the cocktail you are about to taste.

You’ll leave relaxed, with a deeper understanding of Oaxaca’s traditional medicine and mezcal’s cultural meaning, plus a feeling and memory you won’t find on any tour.
