Was a great tour, in a beautiful setting, and our tour guide was wonderful.. Learned a lot about balsamics and how they are made. And we were given a generous amount of food to sample the product with.

Overview

Wine-tasting in Italy is almost a traveler’s rite of passage, but few tours explore the equally rich traditions of vinegar production. With this tour, visit one of Modena’s oldest traditional balsamic vinegar producers, touring the vineyards and seeing all the stages of production from the pressing of grapes to the barrel aging. Itinerary

Meet your host, a family member of the seven-generation Antica Acetaia Cavedoni dal 1860, directly at the vinegar cellar for a two-hour small-group tour. Begin with an overview of the history and production of authentic Balsamic Vinegar from Modena, then set out to stroll through the vineyards to learn about the types of grapes used to produce this premium vinegar.

Afterwards, head inside the vinegar cellar to visit the barrel rooms while hearing about the intricate aging process. End with a tasting of balsamic vinegars aged from five to 30 years, plus gourmet foods from the region and Lambrusco wine produced on the same estate. You will have time to purchase balsamic vinegar and other specialties from the cellar shop after the tasting.

Passionate father and son team provided one of the best tours we've ever had. They spent time explaining the entire process of balsamic vinegar production, how to distinguish authentic DOP products, and shared their family tradition of a "batteria" of vinegar for each new family member. Their tasting presentation exceeded expectations-- delicious bread, mortadella, prosciutto, Parmigiano-Reggiano cheese all paired with their different balsamic products. This was memorable and very, very special.

This was the highlight of my Italy trip! So glad I picked this tour. Elisa was super friendly, informative and passionate about balsamic vinegar. Didn’t expect to meet two generations of the owners but they came to greet us too, really made us feel like vinegar making is so much more than just a family business for them. They truly love balsamic vinegars and want to share everything they know about vinegar making and tasting with their visitors. It was quite simply outstanding! Not to be missed. We met some of the family, heard history, learned how balsamic is made and wondered about the future of these small family farms. Really a step back in time. And if you’re lucky (We happened to be the only 3 people that AM) you might get to taste the over 125 year old balsamic! We bought an 80 year old bottle! This is truly a family operation and the guide was so knowledgeable. Enjoy!

Elisa was very knowledgable about the balsamic and the family history of the owners. Paolo, Marcello and Elisa were very friendly and their products were excellent. The lunch provided was all local products and tasted amazing. It was very interesting pairing the different balsamic to the food, especially the dessert. Their wine was very nice but it didn’t overtake or spoil the taste of the balsamic.

I think this was the tastiest tour I did while I was in Italy. I will start by saying that Paolo is beyond kind and went out of his way to make me feel welcomed. I happened to have the luck of being the only person that booked the tour at that time, so I had a private tasting and it was awesome. The acetaia was beautiful and you could immediately tell how much love and passion have been put into this estate over the past generations. This is a small family business and you won't taste this delicious balsamic vinegar anywhere else. They also served their own Lambrusco wine which was the best. I would totally do this tour again! Afterwards, Paolo even called me a taxi since I took public transportation out there and there wasn't a bus back for a few hours. This is the type of business you think of when you imagine one in the Italian countryside: small, family run and just beautiful in every way. You won't regret this tour or supporting this amazing family.

What a great experience learning and trying the different aged balsamics. Marcello and Paolo's family history and story of over 160yrs was was truly amazing to hear. We got to try the 7yr, 8yr, 19yr, 25yr, 50yr to 130yr old balsamic with locally produced parmesan (12 and 36 month), Parma ham, mortadella and salami. Topped if off with some homemade dessert!! A truly unique experience here in modena!! Would like to thank the family picking and dropping us off at the train station!!

This was a really great tour. The process of making this genuine balsamic vinegar was so interesting. This authentic product is not available outside of Italy. We got to sample the vinegar through different stages of aging, including one that was 165 years old. The tour ended with a delicious lunch. We were able to purchase the products there and I had some shipped home at a very reasonable rate. I highly recommend this tour.
