You will learn the basic information of soy sauce such as the making process, the variety of soy sauce type. Then taste 5 different types of soy sauce and experience food pairing with each. It includes the tips to how to use each type of soy sauce for daily cooking, so that guests can have more cooking variety even after they are back home. This workshop is perfect for those who love cooking and want to deepen their knowledge of Soy sauce. *Preschooler (under 7 years old) is free and can join with a parent. If you would like us to prepare tasting for them, please include them in the number of participants.

This cooking class takes place every Tuesday. As a chef and nutritionist who previously ran a French restaurant serving home-style meals on the World Heritage site of Yakushima, I also focus on healthy Japanese cuisine. I will carefully teach you how to recreate the recipes at home. You will learn about culture and history using ingredients unique to Kyoto. Most of the ingredients used in class are vegan. This is the only ramen workshop in Kyoto run by a ramen restaurant, and our classes have many vegetarian and vegan customers. You will paint your Ramen spoons on the second floor of the restaurant. The ramen bowls and ramen spoons will be baked in a special kiln overnight for free. You can actually take the bowls home and use them. You can also display them at home. After that, you will cook Michelin-starred ramen under the guidance of a chef in the professional kitchen on the first floor. All the ingredients prepared by the chef are brought in from nearby Musoushin Ramen. Finally, you will eat the delicious ramen that you cooked yourself. Michelin-starred ramen that you cooked yourself is the best!

In the cozy Shuhari townhouse, guests prepare a classic Japanese bento using Kyoto’s pure underground spring water. You will learn to make onigiri rice balls, dashimaki tamago, spinach goma-ae, and other seasonal side dishes that create a balanced meal. The class combines demonstrations with practical cooking, so you can learn authentic techniques while preparing the dishes yourself. After cooking, enjoy your handmade bento as a relaxing picnic by the Kamo River. The experience ends with a casual outdoor matcha moment made with fresh shrine water. As this is a private session, the menu may be adjusted with advance notice.
