We learned a lot about Oaxacan cuisine, ingredients, and traditional cooking techniques. The food was delicious, the chef was friendly, knowledgeable, and great at guiding us through every step, and the venue was spacious, and welcoming. We would definitely recommend this experience to anyone visiting Oaxaca!

Great location, chef was very knowledgable and friendly. We were a small group and took our time with the different steps which was now problem at all. The meal was really good as well, so all in all a very complete experience.

      Great experience, learnt a lot about the mexican culture. The old cooking techniques and moderns. The food was delicious and it was great to do it from scratch.       Oswaldo was an excellent teacher and the class was well organized. There was enough for everyone to do and the group size was ideal for meeting new people and having fun with new friends. Ideal for anyone who wants to learn. I'm more experienced as a cook, but learned a lot, but the people in our group who were less experienced didn't ever seem lost or unable to complete the tasks.       There are cooking classes, and then there are experiences that stay with you forever. Our afternoon with Chef Oswaldo was exactly that. From the moment he greeted my husband and me near the beautiful Templo de Santo Domingo, we immediately felt welcomed. As we walked together through the charming streets of Oaxaca to his beautiful outdoor cooking studio, the conversation flowed naturally, and it quickly became clear that this wasn’t going to be an ordinary cooking class. To our surprise, it was just the two of us. What could have simply been a class became an incredibly personal, intimate experience. It felt less like being students and more like spending the afternoon with a friend who was excited to share his family’s traditions and the culture he loves. His studio is absolutely beautiful—peaceful, open-air, surrounded by plants, traditional décor, and the perfect atmosphere for learning. It reflects the same warmth and authenticity that Chef Oswaldo brings to his guests. What impressed me most was his passion. Chef Oswaldo didn’t simply teach us recipes—he shared stories, history, and family traditions. We learned that Oaxaca is home to far more than the famous seven moles many people know; there are actually twelve traditional varieties. The mole he chose to teach us was especially meaningful because it is his personal favorite, a treasured recipe passed down from his grandmother. Knowing that made every ingredient and every step feel even more special. Everything was prepared completely from scratch. We ground ingredients by hand on a traditional volcanic stone metate, learned how each ingredient contributes to the balance of flavors, made handmade tortillas, prepared chocolate tamales, and enjoyed several incredible Oaxacan dishes together. One of my favorite parts of the experience was being able to ask Chef Oswaldo about my own attempts at making black mole back home. I’ve spent years experimenting with recipes and shared with him how I struggle to maintain its beautiful black color as I continue developing the flavors. Without hesitation, he immediately understood exactly what I meant. His explanation of the chiles, roasting techniques, and balance of ingredients helped me understand what I’d been missing. He even offered to share additional recipes and techniques from his cookbook through WhatsApp. That generosity and willingness to continue teaching after the class speaks volumes about the kind of chef—and person—he is. What also stood out to me was Chef Oswaldo himself. He is an incredibly talented young chef whose passion shines through in everything he does. It is obvious that he has found his calling. He isn’t simply preparing food—he is preserving generations of Oaxacan culinary traditions and sharing them with people from around the world. His patience, humility, professionalism, and genuine kindness made every question feel welcome. He never rushed us, never made us feel uncomfortable, and encouraged us every step of the way—even when our tortillas weren’t quite as round as his or when I struggled a bit more than my husband with spreading the tamale dough! We laughed, learned, and enjoyed every minute together. Knowing that Chef Oswaldo is already creating experiences of this caliber at such a young age makes me excited for what lies ahead in his career. If this is the level of dedication, craftsmanship, and heart he brings today, I can only imagine how many more people he will inspire in the years to come. Oaxaca is incredibly fortunate to have someone so passionate serving as an ambassador for its rich culinary heritage. As someone who works in hospitality myself, I pay close attention to the little details that make guests feel genuinely cared for. Exceptional hospitality cannot be faked—it comes from the heart. Chef Oswaldo possesses that rare gift. He made my husband and me feel welcomed from beginning to end, and that warmth transformed an already wonderful cooking class into one of the most memorable experiences of our trip. We didn’t just leave with full stomachs and recipes to recreate at home. We left with a deeper appreciation for Oaxacan culture, traditions, and the people who keep those traditions alive.       Chef Oswaldo is an award winning Oaxacan chef who was wonderful to learn from. The food was exquisite, the space is absolutely gorgeous and the class itself was fantastic. The chocolate tamales were to die for! I would rebook this class in a heartbeat.       The experience was hands on and educational. We all prepared the meal together and ate together as a group. Oswaldo was so knowledgeable and obviously passionate about his craft and culture. As group classes do, everyone started out a bit shy but we ended up laughing and having a great time eating and chatting. It was a lot of food but we could take extra home with us. I would definitely recommend this class.

      Chef Oswaldo was a great host! Once are group met up he took us back to his beautiful place where we prepared some amazing Oaxacan dishes. Everything was explained to us in both and English so no one felt left out, we had a small group of 4 so felt very intimate. If your looking to book a cooking class, I would definitely recommend this one. We came hungry and left stuffed! Memorable experience and skill to take back home to cook for friends and family.

      Chef Oswaldo was absolutely terrific! He gave clear directions, wonderful support and gave beautiful explanations of the history of the food. He created a really wonderful atmosphere and was very engaged with our group of 6. The food we made was absolutely delicious and were items we had not yet had the opportunity to try. We made memelas, chocolate tamales, mole and red salsa in mocajete. It was really fun to be hands on and then enjoy the fruits of our labor. Chef Oswaldo also has an impressive background full of travel and personal history, he was a joy to get to know. I would strongly recommend this cooking class for all levels, especially novice. I am not a cook, nor do I enjoy cooking but this class was a lot of fun and really helped me appreciate cooking.

      Osvaldo was great! So informative and very engaging. Oh! And Chocolate Tamales?! Yes and thank you! I've only made ones with pineapple and coconut. Highly recommend! My only suggestion is that if someone has walking difficulties make sure you let the instructor know so that your guest meets at the culinary location and not somewhere a distance away then. has to walk. ;-) I wanted to grind the mole but my legs were spent! I would've never been able otherwise get up. LOL

      Our cooking class was all about the traditional Oaxaca cuisine and our chef, Oswaldo Ramirez was able to teach us about the food, and how to create an amazing meal that was so delicious. He gave us the recipes for all the dishes for us to enjoy making at home. The mole, the memelas, the red salsa and especially the Chocolate tamales were a taste sensation I didn't expect. I would definitely recommend this experience if you love food and learning about new cultures.

      Oswaldo was a great host. He welcomed us with his own made pastry/bread and also a super fresh passionfruit drink. The class was very hands on and everyone was very engaged.       Really wonderful cooking class with Oswaldo. Thanks to Oswaldo being very organized, we learned how to make more dishes than I would’ve thought possible with the time we had (mole, salsa, tortillas, memelas, and tamales) and we were all involved in the preparation steps. Oswaldo did a great job of engaging everybody, explaining the cultural context of each dish, and giving clear instructions that were easy to follow. The ingredients were fresh and delicious, and we came away with a recipe book. All of the recipes used ingredients you could find fairly easily in most countries. My dad and I both agreed that this was the best meal we ate in Oaxaca!

      This is a wonderful cooking class located just a few blocks from Santo Domingo cathedral. We got to learn about traditional Oaxacan cooking techniques in a beautiful courtyard. Oswaldo is very knowledgeable and fun. He answered many questions from our inquisitive group. He was also very mindful and accommodating of the allergies and dietary restrictions in the group.

      Very fun, informative, hands on cooking class. Our chef, Oswaldo, has a Masters degree in native Oaxacan cooking. The class is held in a nice outdoor covered patio setting. All the ingredients, cookware and utensils are organized in advance. We got to make our own salsa, tortillas, mamelas, brown mole with chicken and rice, and chocolate tamales for dessert. It is a ton of food! They provide all the recipes in a little booklet that you can take home. There were only 4 of us in the class and it was very interactive and fun.

      BEST EXPERIENCE IN OAXACA!! You know that feeling when you ate something so good you feel kinda drunk? That was me! And, no I did not have a drink. I took a few cooking classes while in Oaxaca. This one was my favorite! It's a week later and I'm STILL THINKING ABOUT IT. It was such an honor to work with Chef Oswaldo, who is also an author of his own book! He is truly an artist and academic of his profession. Oswaldo very artfuly and mindfully has found a way to fuse the rich history of the Oaxacan cuisine with succinct explanations that traditional cooks can understand and follow (aka me: give me a recipe I can follow at home, please! But, also tell me the story). I loved how organized he was- so easy to understand and see exactly how I could do it at home. He even had a booklet for me to keep with all the recipes in it where you could take notes. Thank goodness! My brain and stomach were very satisfied by this class. And, we did the thing I wanted to do- learn how to make handmade tortillas! We also made memelitas, mole, and chocolate tameles, and other goodies. I thought I didn't like mole that much- changed my mind! So good! Thank you so much to the chef and all who made this possible. Wishing you much continued success and happiness, Oswaldo and company!
