Great Tour on the Production of Parmesan Cheese
This is a small organic farm with about 300 cows. Rebecca our guide gave us a history of the cheese and the farm. We saw the cows and she explained the process of how they take care of them. Then we saw the next generation of cows waiting to mature before they are moved to the main barn. Then we toured where the cheese wheels are produced. This farm produces about 3 to 8 200 lb cheese wheels a day. Next was the 3 week process of the cheese in salt water to dry it out. Then they move to the aging room where they must pass certification in order to be called Parmesan. There is a lot more to tell but I don’t want to ruin the tour for you. I highly recommend.

A wonderful experience making and enjoying pasta with a local!
This was an in home experience in a kitchen of a local mother and daughter. You began by making the homemade dough and then using the machine to make ravioli and tagliatelle. Virginia did a great job explaining everything along the way and then we were then able to enjoy what we prepared on the beautiful patio overlooking the village where the mother and daughter reside. They served the tagliatelle with sauce using tomatoes that they grew in their garden. They provided us with espresso upon our arrival and tirimisu to finish out the experience. While Virginia was preparing what we made she provided us with local meats/cheeses/bread. This was a wonderful experience that I would recommend to anyone who is going to be in the area!
