Masseria Stali grows its own ingredients — cereals, vegetables, olive oil — all certified biological, all harvested on the estate. The experience begins with a tour of the farm and its own-grown raw materials, grounding the cooking in the land itself. Everything you cook, you eat — paired with a glass of the estate's wine. This is not a demonstration: you roll, you shape, you cook, you taste.

All'Azienda Agricola Umileterra di Castelvetro di Modena, the hosts welcome you with a herbal tea or a coffee and a sweet treat, and tell you about their farm. Then you go to the kitchen, everyone to their own station: you knead the dough, you prepare the filling, you roll it out with the rolling pin and you close the tortelloni by hand, as is done in Emilia. We finish at the table with the pasta you prepared, usually with butter and sage, along with an aperitif rich in focaccia, savory tarts, frittata, local cheeses, and homemade preserves.
