We will visit the most relevant places and while we arrive at each of the destinations we will observe such beautiful landscapes. We will start at the crystal viewpoint, there we will contemplate the impressive forested mountains and we will enter a cave. We will make a stop at the gate of heaven and we will be in the highest part of Querétaro, with 3200 meters above sea level, and we will take the traditional photo of the sky. We will enter Pinal de Amoles, the newly named Pueblo Mágico, and we will look at the beautiful crystalline waters of the Escanelilla River and at the end of the river we will be able to look and take a dip in pure water. We will then visit the El Chuveje waterfall where you will see one of the great waterfalls of the destination, there you will be able to observe a lot of wild flora and fauna such as pigs in the open air. The Discover Querétaro tour not only explains curiosities about the attractions we will visit. Rather, it helps participants better understand why Querétaro is the way it is. Throughout the tour our guides will explain how the water, the location and the first settlers powerfully determined the city. The tour is a guided group experience, walking and by car. Each participant will be given a receiver with a headset so that they can clearly hear the guide's comments; Likewise, each attendee will have a timeline that will help them locate themselves in the different historical periods that we will discuss. We will begin at Hotel Criol, where visitors will attend an introduction of approximately 30 minutes, which will take place in the hotel library.

San Miguel is a beautiful city, known for its artists, quaint streets, and colorful colonial architecture. This private two-hour tour of the city's Centro district visits landmarks like La Parroquia, Bellas Artes school, and the most impressive mansion. The tour is best early in the morning or at sunset. Our journey begins with a 30‑minute drive from San Miguel, followed by a short bus ride and a scenic half‑mile walk through the countryside to reach the site. Once there, we’ll explore the three main pyramids, learning about their architecture, symbolism, and the daily life of the people who built them. After the visit, we return by bus and, on the way back to San Miguel, we can stop at a local winery to enjoy regional cuisine and sample fine wines, making this experience a perfect blend of history, culture, and flavor. In this class led by two professional chefs (You choose in English or Spanish), you will run the complete process of tacos al pastor from scratch. You will prepare the marinade using dried hydrated chilies, spices and acidic elements, learning proportions, roasting and grinding to achieve depth and balance. You will marinate the protein (or vegetable alternative) by applying correct timing and cooking techniques to obtain proper caramelization and flavor development without overcooking. You will work with nixtamalized corn dough, adjusting hydration, uniform pressing and comal cooking to achieve tortillas with elasticity and optimal point. You will make two sauces using roasting and grinding techniques, balancing acidity, itching and saltiness to complement the fat and texture of the dish. Finally, you will assemble and taste your tacos applying proportion and structural balance. The class brings transferable technique, process control and real culinary understanding, not just a recipe.
