This is a culinary activity taught by an instructor, not a traditional guided tour. The experience is led by Alfonso Rocha (MilpaChef), chef specializing in sustainable gastronomy. During the class, the host acts as an instructor and culinary guide, sharing practical and cultural knowledge. Alfonso was director of Slow Food Mexico for 10 years and is currently professor of gastronomy at the University of the Americas Puebla (UDLAP).
