Top Seoul Wine Making Workshops

Why Choose This Experience? This isn't just a tasting or a one-time workshop—it's a complete introduction to authentic makgeolli brewing at a working brewery. Unlike many classes, you'll learn the traditional techniques, ingredients, and fermentation process used to brew real Korean rice wine. Every step is designed to give you practical skills you can continue using at home. As the author of the first comprehensive English guide to home brewing Korean rice wine and founder of Baekusaeng Brewery, I've helped thousands of students from around the world discover the art of makgeolli. Whether you're a complete beginner or a fermentation enthusiast, you'll leave with the knowledge, confidence, and inspiration to keep brewing long after your trip to Korea.

* To enhance your experience, please inform us of your food and wine preferences, as well as any allergies, before the tour date. The menu typically features Korean-style meat dishes. Korean cuisine offers a diverse array of flavors and textures, making it surprisingly versatile when paired with wine. While traditionally associated with rice-based spirits like soju and makgeolli, the complexity of Korean dishes can complement various wine styles. Light-bodied whites like Riesling or Pinot Grigio pair well with spicy and tangy dishes like kimchi or Korean BBQ, while medium-bodied reds such as Pinot Noir or Gamay can complement heartier dishes like bulgogi or galbi. Ultimately, experimentation is key, but the contrast and balance between Korean flavors and wine profiles can create delightful culinary experiences.

Korean alcohol is a lot more than just a green bottle of soju, which is diluted ethanol with artificial sweetener. Broadly, Korean alcohols are divided into Tak-ju (unfiltered rice wine), Cheong-ju (filtered clear rice wine) and So-ju (distilled spirit). Here, we will focus on our specialty, soju, but we can also taste other types too. Samhae soju was a beloved choice of spirit among the noble class of Joseon dynasty(1392~1894). This luxurious alcohol had caused cult following, but the making was so resource(rice)-heavy that production had to stop during famines. The current master, Hyeonjong Kim had learned and practiced for more than 10 years under master Taeksang Kim who had inherited and kept the recipe in the family. Sadly, master Taeksang Kim passed away in 2021. We will have a privilege to taste the history. *For private groups, please make a private group reservation or message me.
