We will prepare traditional tajarin, ravioli del plin, and authentic Tuscan pici, following the original recipes. You will learn how to make two different types of fresh pasta dough: an egg-based dough for the Piedmontese pasta and an egg-free dough for the pici. Each preparation will introduce you to specific traditional techniques, from the delicate “plin” used to shape the ravioli to the hand-rolling technique used to make pici.
