Join this private cooking class, taught by a professional chef, to learn about the culinary history of Mexico as well as cooking tips and techniques while making delicious and authentic Mexican recipes. We'll start with "Sopa de Tortilla" and a Veracruz-style Snapper filet cooked in a banana leaf, followed by a beloved Mexican dessert, Buñuelos (Mexican fritters served with a syrup sauce.) Everything we cook, we'll eat together, too. Requests are accepted for a unique gastronomic experience tailored to you!

Mexican Gastronomy was recognized as Intangible Cultural Heritage of Humanity in November 2010, by UNESCO. For me, it is a pleasure to show part of the Mexican cultural heritage; based on traditional recipes with a contemporary twist. If travelers so wish, they are taken on a tour of the local market where they can view fresh produce at its best. We will teach them to make the most traditional dishes of Mexican cuisine, where they will be able to use techniques inherited from generations.

Our classes will be taught by a certified un-Chef, with which they will travel through Mexico with the flavors that we will be tasting and the traditional techniques with which we will be working throughout the class. As we will try some drinks made with a liquor of Mexican origin from different regions of the country. Also during the class the chef instructor will explain the origin and use of the ingredients they cook, as well as part of the history of the dishes made with those ingredients. This is an experience for us to have dinner with friends, one of our main objectives is to meet them and that we can transmit our culture through our traditional food, which is a heritage of humanity.

In this class led by two professional chefs (You choose in English or Spanish), you will run the complete process of tacos al pastor from scratch. You will prepare the marinade using dried hydrated chilies, spices and acidic elements, learning proportions, roasting and grinding to achieve depth and balance. You will marinate the protein (or vegetable alternative) by applying correct timing and cooking techniques to obtain proper caramelization and flavor development without overcooking. You will work with nixtamalized corn dough, adjusting hydration, uniform pressing and comal cooking to achieve tortillas with elasticity and optimal point. You will make two sauces using roasting and grinding techniques, balancing acidity, itching and saltiness to complement the fat and texture of the dish. Finally, you will assemble and taste your tacos applying proportion and structural balance. The class brings transferable technique, process control and real culinary understanding, not just a recipe.

Isabel is incredibly passionate about pre-Hispanic cooking - so get ready to make salsa picante in a traditional molcajete and prepare a meal alongside your host that features the "three sisters". With the help of a local chef, you'll discover the authentic cuisine of San Miguel de Allende. The experience begins with a tour of an organic garden, where you'll harvest fresh, seasonal ingredients. You'll learn unique cooking techniques and create Mexican dishes you can easily replicate at home. During the class, enjoy local beverages like aguas frescas, craft beers, and regional wines. This experience is more like Mezcal workshop, on the firs part we show, process, classification, geographical situation, agaves and regions, and then in the practical part you will have a blind comparative tasting between the different areas and agaves, everything leaded by a professional agave specialist and international sommelier

When we first arrived in San Miguel de Allende, the only thing I missed was good cheese. It took some time and effort, but I finally discovered several superb local artisan cheesemakers hiding in plain sight. Known as the Empress of Cheese, I've been studying the art and science of cheese for over 20 years in Canada, the US, France and in Italy and have spent the last few years exploring the culture of Mexican cheese, specifically, artisan made European style cheeses. Now I share my knowledge and the divine cheeses I've found with others. Come learn about the rich history of European influences in Mexican artisan cheese and where to buy, how to serve and pair these cheeses with drinks and condiments and how set up a French inspired cheeseboard. Everything is sourced locally from the artisan cheeses to the herbs, flowers, honey and other ingredients used in the class. The class is held in our home with a view over the city with the beautiful pink marble Parroquia in the center.
