Chef Oswaldo was absolutely terrific! He gave clear directions, wonderful support and gave beautiful explanations of the history of the food. He created a really wonderful atmosphere and was very engaged with our group of 6. The food we made was absolutely delicious and were items we had not yet had the opportunity to try. We made memelas, chocolate tamales, mole and red salsa in mocajete. It was really fun to be hands on and then enjoy the fruits of our labor. Chef Oswaldo also has an impressive background full of travel and personal history, he was a joy to get to know. I would strongly recommend this cooking class for all levels, especially novice. I am not a cook, nor do I enjoy cooking but this class was a lot of fun and really helped me appreciate cooking.

My only suggestion is that if someone has walking difficulties make sure you let the instructor know so that your guest meets at the culinary location and not somewhere a distance away then. has to walk. ;-) I wanted to grind the mole but my legs were spent! I would've never been able otherwise get up. LOL

Our cooking class was all about the traditional Oaxaca cuisine and our chef, Oswaldo Ramirez was able to teach us about the food, and how to create an amazing meal that was so delicious. He gave us the recipes for all the dishes for us to enjoy making at home. The mole, the memelas, the red salsa and especially the Chocolate tamales were a taste sensation I didn't expect. I would definitely recommend this experience if you love food and learning about new cultures.

Really wonderful cooking class with Oswaldo. Thanks to Oswaldo being very organized, we learned how to make more dishes than I would’ve thought possible with the time we had (mole, salsa, tortillas, memelas, and tamales) and we were all involved in the preparation steps. Oswaldo did a great job of engaging everybody, explaining the cultural context of each dish, and giving clear instructions that were easy to follow. The ingredients were fresh and delicious, and we came away with a recipe book. All of the recipes used ingredients you could find fairly easily in most countries.
My dad and I both agreed that this was the best meal we ate in Oaxaca!

This is a wonderful cooking class located just a few blocks from Santo Domingo cathedral. We got to learn about traditional Oaxacan cooking techniques in a beautiful courtyard. Oswaldo is very knowledgeable and fun. He answered many questions from our inquisitive group. He was also very mindful and accommodating of the allergies and dietary restrictions in the group.

Very fun, informative, hands on cooking class. Our chef, Oswaldo, has a Masters degree in native Oaxacan cooking. The class is held in a nice outdoor covered patio setting. All the ingredients, cookware and utensils are organized in advance. We got to make our own salsa, tortillas, mamelas, brown mole with chicken and rice, and chocolate tamales for dessert. It is a ton of food! They provide all the recipes in a little booklet that you can take home. There were only 4 of us in the class and it was very interactive and fun.

BEST EXPERIENCE IN OAXACA!! You know that feeling when you ate something so good you feel kinda drunk? That was me! And, no I did not have a drink. I took a few cooking classes while in Oaxaca. This one was my favorite! It's a week later and I'm STILL THINKING ABOUT IT. It was such an honor to work with Chef Oswaldo, who is also an author of his own book! He is truly an artist and academic of his profession. Oswaldo very artfuly and mindfully has found a way to fuse the rich history of the Oaxacan cuisine with succinct explanations that traditional cooks can understand and follow (aka me: give me a recipe I can follow at home, please! But, also tell me the story). I loved how organized he was- so easy to understand and see exactly how I could do it at home. He even had a booklet for me to keep with all the recipes in it where you could take notes. Thank goodness! My brain and stomach were very satisfied by this class. And, we did the thing I wanted to do- learn how to make handmade tortillas! We also made memelitas, mole, and chocolate tameles, and other goodies. It’s always a little intimidating doing classes with groups as a solo traveler but I was made to feel very welcome and thoroughly enjoyed my experience. The chef was passionate about the food and the rich culture of Oaxaca. Him and his sous chef were welcoming, informative and inviting. They made the whole class intriguing. We were a group of 8 and with Oswaldo and his partner We made Tortilla, memelas, mole with chicken, chocolate tamale and salsa sauce.
