We'll start with "Sopa de Tortilla" and a Veracruz-style Snapper filet cooked in a banana leaf, followed by a beloved Mexican dessert, Buñuelos (Mexican fritters served with a syrup sauce.) Our classes will be taught by a certified un-Chef, with which they will travel through Mexico with the flavors that we will be tasting and the traditional techniques with which we will be working throughout the class. As we will try some drinks made with a liquor of Mexican origin from different regions of the country. Also during the class the chef instructor will explain the origin and use of the ingredients they cook, as well as part of the history of the dishes made with those ingredients. This is an experience for us to have dinner with friends, one of our main objectives is to meet them and that we can transmit our culture through our traditional food, which is a heritage of humanity.

When we first arrived in San Miguel de Allende, the only thing I missed was good cheese. It took some time and effort, but I finally discovered several superb local artisan cheesemakers hiding in plain sight. Known as the Empress of Cheese, I've been studying the art and science of cheese for over 20 years in Canada, the US, France and in Italy and have spent the last few years exploring the culture of Mexican cheese, specifically, artisan made European style cheeses. Now I share my knowledge and the divine cheeses I've found with others. Come learn about the rich history of European influences in Mexican artisan cheese and where to buy, how to serve and pair these cheeses with drinks and condiments and how set up a French inspired cheeseboard. Everything is sourced locally from the artisan cheeses to the herbs, flowers, honey and other ingredients used in the class. The class is held in our home with a view over the city with the beautiful pink marble Parroquia in the center.

This experience is more like Mezcal workshop, on the firs part we show, process, classification, geographical situation, agaves and regions, and then in the practical part you will have a blind comparative tasting between the different areas and agaves, everything leaded by a professional agave specialist and international sommelier
